Slivers of orange rind from 1 orange

Peel and halve pears. Scoop out the core with a melon baller and use a sharp knife to remove the stem and blossom end.
Put into cold water (add a tablespoon of water to prevent browning) while you finish the rest
Make up the cranberry poaching liquid in a large pot and bring to the boil adjusting the amount so it will cover the number of pears you use.

Put the pear halves into the boiling liquid and invert a glass (corelle or other) plate over the pears to keep them immersed in the juice. Poach until they are just tender when poked with a knife.
